Ingredients
4 Fuji apples
1/2 package thick cut smoked maple bacon
4 shallots
1 clove garlic
1/2 tsp salt
2 tbsp brown sugar
1/2 tsp ground nutmeg
1 tsp ground cinnamon
4 tbsp unsalted butter

Finely chop shallots and mince garlic. Core and slice apples into bite-sized pieces. In a medium frying pan, lay out bacon over medium heat for three to six minutes, flipping often until bacon is crisp. Set aside.

In a large saucepan, melt butter and add garlic and shallots, stirring frequently for two minutes or until shallots become translucent. Add brown sugar, salt, nutmeg and cinnamon. Stir until it is one with the butter. Chop the cooled bacon into pieces, then add it and the apples to the saucepan.

Reduce heat to medium low and stir the mixture frequently for four minutes until the apples become fork tender. Reduce to low heat and cover for one minute.

Serve and enjoy!

The shallots paired with tart Fuji apples makes for a perfect marriage of flavors. All topped off with bacon and caramelized in heavenly brown sugar, nutmeg and cinnamon, this apple bacon compote is a winner every time. It’s also easily transformed into a veggie- and vegan-friendly recipe with any meatless breakfast sausage or bacon substitute.
