Ingredients
2 boneless skinless chicken breasts, chopped
1 tbsp olive oil
3 limes
2 cloves garlic, minced
3/4 cup Sweet Baby Ray’s BBQ Sauce
2 cups red cabbage, shredded
2 large carrots, shredded
1 small bunch cilantro, chopped
8 flour tortillas
1 cup white rice
1 cup sour cream
1 tbsp pepper
1/2 tbsp salt

In a large saucepan over medium heat, add olive oil, chicken and the juice from two limes and sauté for approximately 15 minutes, or until the chicken is no longer pink and its juices run clear.

In a small pot, combine one cup of rice with two cups of water, then bring to a boil. Once boiling, reduce to low heat and cover for 15 minutes. Do not lift the lid letting steam escape during that time.

While the chicken is cooking, use a cheese grater to shred cabbage and carrots into a bowl and add the juice of half a lime and a pinch of salt. Now add salt, pepper, garlic, the remaining lime juice and barbecue sauce and simmer chicken an additional two minutes.

Fill your tortillas with Barbecue chicken, rice, shredded veggies, a spoonful of sour cream and garnish with cilantro. Then, pig out on some seriously good eats!
