This delicious recipe packs some serious punch and is perfect for parties. After being baked, the jalapeños are not nearly as threatening as they are when raw but still carry a lush, spicy flavor. Whether you’re getting the gang together to watch football or just looking to kick back with a more interesting snack, these Jalapeño Bacon Bombs are sure to satisfy your craving.
Jalepeno Bacon Bombs
12 fresh, whole jalapeño peppers
Two 8 oz. packages of softened cream cheese
One package pepper bacon
1/2 yellow onion
Three cloves of garlic
1/4 cup chopped sundried tomatoes
1/2 tsp salt
1/2 tsp fresh ground black pepper
Preheat oven to 350 degrees. Mince garlic and finely chop onion. In a bowl, combine softened cream cheese, onion, garlic, sundried tomatoes and salt and pepper. Set aside.
Cut off the jalapeño stems, slice the jalapeños length-wise and scoop out all the seeds. (Be careful not to touch your face after cutting the jalapeños. Wash your hands thoroughly!) Spoon your cheesy mixture into each jalapeño half until they’re full.
Slice your bacon strips in half and wrap each piece entirely around the stuffed jalapeños. (If you need to secure the bacon with a toothpick, be sure to soak the pick in a cup of water beforehand so it doesn’t catch fire in your oven.)
Place all the wrapped jalapeños, evenly spaced, on a baking sheet. Cook in the oven for 10–15 minutes until bacon begins to crisp. For added crispness, finish the Jalapeño Bacon Bombs under your broiler for two minutes. Remove and let cool for five minutes.
