You can easily pump up this apple endive recipe with a little protein by mixing in some cooked cubed chicken or tofu. If you’re a fan of spicy food, add 1/4 teaspoon cayenne powder and 1/4 teaspoon curry powder to the mix! This peachy keen drink makes an equally delicious virgin option by simply kicking out the vodka. For an extra sweet and tropical kick, use coconut-flavored vodka in place of plain.
Apple endive ingredients
1 green apple, finely diced
1 red apple, finely diced
2 celery stalks, finely chopped
1 shallot, minced
1 green onion, finely sliced
4 heads Belgian endive
3/4 cups blue cheese crumbles
1/2 cup hazelnuts, chopped and toasted
3 tbsp mayonnaise or Vegenaise
1 tbsp lemon juice
1 tbsp water
Salt and pepper to taste
In a bowl, combine lemon juice and water. Lightly toss chopped apples in bowl until thoroughly coated and then strain apples to remove excess liquid. Mix apples, shallot, blue cheese, celery, mayonnaise, and salt and pepper to taste. Separate endive leaves and arrange on platter. Scoop spoonfuls of mixture into each endive leaf and garnish with green onion and chopped hazelnuts. Serve immediately and enjoy!
Lightly moisten slender glass rim with water or lemon juice and sugar rim by dipping in light brown sugar. Mix orange-mango juice, peach nectar, frozen lemonade, club soda and vodka. Carefully pour into sugared glass and garnish with an orange slice. Serve immediately! Yields one beverage.
