‘Tis the season for sweetness: The weather outside is frightful, but these cookies are so delightful.

Ingredients

1/2 cup milk
3/4 cup creamy peanut butter
1 tablespoon vanilla extract
1 stick softened butter
5 tablespoons semi-sweet cocoa powder
2 cups sugar3 cups oatmeal
1 cup shredded coconut
1 large piece of wax paper or aluminum foil

In a large saucepan, combine milk, vanilla, sugar, cocoa and butter over medium-high heat. Bring the mixture to a boil for one minute, then reduce to medium heat and allow to cook two additional minutes.

Remove from heat and add peanut butter and oatmeal. Stir the mixture until all the ingredients are thoroughly incorporated. With a large spoon, drop the mixture onto wax paper or foil in small balls, about 2 tablespoons per cookie.

While chocolate is still melted, sprinkle the cookies with shredded coconut. Allow cookies to cool and harden for at least 15 minutes. Peel from paper and enjoy!

(To make your snowball cookies extra snowy, experiment with replacing cocoa powder with 1/2 cup of white chocolate chips. Or for an extra crunch, throw some crushed walnuts into the mix!)
