Ingredients:
2 single portion salmon fillets
1 leak
1 yellow onion
2 large carrots
2 stalks of celery
4 tbsp butter
Salt and pepper

Preheat oven to 350 degrees. Cut rectangles out of wax or parchment paper twice the length of your salmon fillet. The piece of fish must fit on half of the rectangle. Thoroughly butter the inside of the paper. Cut the veggies into thin strips, about 4 inches long. Season the fish with salt and pepper to your liking and place it centered on one half of the parchment paper. Lay the strips of veggies on top of the salmon and place a pad of butter on top of the veggies so that it will cook down onto the fish. Fold the second half of the paper over the fish creating a sandwich. Roll and pinch the edges of the paper sticking out from the salmon all the way around, creating a sealed pocket for the salmon to steam in. Bake on a baking sheet at 350 degrees for ten minutes.

Warning: Be careful when cutting open the paper pockets once the fish is cooked, the steam coming out is very hot. Enjoy!
