Spicy peanut chicken

Challenge your pallet to a feat of strength! This spicy peanut chicken and broccoli recipe has just enough kick to really tingle your tongue. It’s a quick fix for dinner that has a delicious balance of tang and sweetness. And few ingredients are required to get this tasty Thai recipe cooking.

The cayenne spice is more than just a flavor booster. Cayenne pepper, whether it is fresh or powdered, is a powerful nutritional agent. It aids in digestion by increasing the flow of necessary enzymes that help you metabolize food. It’s also a body detoxifier that helps stimulate your circulatory system for proper blood flow.

Ingredients
2 large chicken breasts
1/2 yellow onion
1 clove garlic
4 cups broccoli florets
Salt and pepper

Sauce
1/2 cup chunky peanut butter
3 tbsp. soy sauce
1 tbsp. honey
1 tbsp. vegetable oil
1 tbsp. rice wine vinegar
1/4 tsp. cayenne pepper
1 tbsp. Sriracha hot sauce (optional)

In a bowl, combine soy sauce, vinegar, vegetable oil and cayenne pepper. Then stir in honey, peanut butter and Sriracha. Mix until sauce is at desired consistency, adding small amounts of vegetable oil to thin, then place in fridge.

Slice chicken breasts into small, 1/2-inch strips. Finely chop onion and mince garlic. Boil a small pot of water and steam broccoli for about 5 minutes until dark green. Spray large pan with cooking spray and add chicken, cooking 4–5 minutes until it is no longer pink.

Add onions and garlic after chicken has been cooking for 3 minutes and continue to cook until onions start to become translucent. Toss in steamed broccoli and coat the whole dish with spicy peanut sauce.
