This ultimate breakfast sandwich is ready in minutes and packed with everything you need for a balanced breakfast. Pair it with a honey banana smoothie and you’ll be pumped with delicious flavors to begin your first day back on campus. Using veggie patties in place of meat helps cut back on the greasiness that usually accompanies breakfast sausage.
Instructions
Sandwich
1 frozen breakfast veggie patty (try MorningStar brand)
1 egg
1 whole wheat English muffin
2 tbsp whipped cream cheese
1 tbsp fresh chives, minced
5–7 fresh spinach leaves
3–4 cucumber slices
1 dab of yellow mustard (optional)
1/4 tsp paprika
salt and pepper
cooking spray, or small dab of butter
Honey banana smoothie
1 cup whole milk
5 ice cubes
1 ripe banana
1/4 cup almond butter
2 tbsp honey
1 tbsp brown sugar
1/4 tbsp ground cinnamon
Microwave veggie sausage according to package directions. In a small frying pan, heat cooking spray or butter over medium heat and break in 1 whole egg. Sprinkle egg with salt, pepper and paprika and fry for 2 to 3 minutes on each side or until cooked to your personal preference.
Slice English muffin in half and toast on medium-high setting in toaster. Mince fresh chives and combine with cream cheese. Once muffin has toasted, assemble sandwich by spreading chive cream cheese on one side and then layering spinach, cucumber slices, fried egg, mustard and sausage patty in any order on top. Enjoy immediately or wrap it up for when you’re on the go.
Combine all ingredients and blend on high until smooth. Enjoy immediately.
