French toast is delicious any day of the week, but why not up the ante and turn it into a crazy breakfast panini? There’s simply no good reason to eat all your favorite breakfast ingredients separately. This recipe gives them all a chance to party on a grilled sandwich!

French toast is delicious any day of the week, but why not up the ante and turn it into a crazy breakfast panini? There’s simply no good reason to eat all your favorite breakfast ingredients separately. This recipe gives them all a chance to party on a grilled sandwich!

This dish does well with variation. Try different fruits, syrups and your choice of protein to mix it up in a new and savory way. It is definitely a crowd pleaser, and though its flavor is rich and complex, it takes just a few steps to prepare.

And who says breakfast needs to be eaten in the morning? Throw a scoop of vanilla ice cream on top of this beast, and you’ll have the makings for the best darn dessert you ever made!

Ingredients
3 eggs, beaten
1/2 milk
1 tbsp. vanilla extract
1 pinch of salt
1/2 tsp. ground cinnamon
1/2 tsp. sugar
4 slices thick cut country bread
1 large banana, sliced
4 slices think cut bacon
4 tbsp. creamy peanut butter
Powdered sugar to garnish
Drizzle with maple syrup as desired
(Makes 2 sandwiches)

In a frying pan over medium-high heat, place your strips of bacon and cook 4–6 minutes, flipping often until they are crispy, then set aside on a paper towel.

In a medium-sized bowl, whisk together eggs, milk, vanilla, salt, cinnamon and sugar. Use the mixture to thoroughly coat your thick-cut bread. Spray a pan with cooking spray or a tablespoon of butter and let warm over medium heat. When your pan is ready, drop a slice of bread onto it, allowing it to cook for approximately 3 minutes on each side, or until the bread begins to turn golden and crispy. Move your bread onto a plate and carefully spread peanut butter on each slice.

Now layer your French toast panini with bacon and bananas. Spray pan again and return assembled sandwich to cook another minute on each side. To make it a true panini, use another heavy frying pan to press down on the sandwich as it finishes cooking. Slice diagonally, garnish with powdered sugar and syrup, and bite into a heavenly breakfast!
