In a large bowl, add flour, sugar, baking powder, salt and cinnamon, stirring until they are thoroughly mixed. In a separate small bowl, add pumpkin purée, eggs, vegetable oil and milk. Mix until well combined, then whip into your large bowl of dry ingredients. Set batter aside.
In a large bowl, blend cream cheese and butter until they are smoothly incorporated. Then gradually stir in powdered sugar, vanilla and cinnamon until the topping is thick and creamy.
Now place a large non-stick frying pan over medium heat, coating the surface with cooking spray or 1 tablespoon of butter. Drop batter onto pan in blobs, approximately 1/4 cup each. Cook for two minutes or until bubbles begin to appear on top of the pancake. Flip carefully with a spatula and cook an additional two minutes or until golden brown.
