The student stove
Well, we’ve our first guest recipe to present. Today’s recipe is for “Queen of Peace Chili” and is presented by Kelly Jacobson. Kelly says this is an old and dear recipe and reminds her of Catholic grade school. As Catholic families tend to be a little on the large side this recipe will probably feed four to six adults.
This has a little more preparation than “normal,” however it’s designed for a crock pot, so you can toss the ingredients in and walk away. If you don’t have one of those lovely slow-cook inventions simply use a standard pot and lid and keep the stove on simmer, i.e. low.
Here are the ingredients, and for those not into red meat or meat at all substitute, with your favorite meat substitute. Okay, here we go …
2 lbs. ground beef
1 Tablespoon butter
1 Tablespoon brown sugar
1/2 cup onion (red, or Walla Walla sweet when in season)
1/2 cup diced tomatoes
1/2 teaspoon dried mustard
1 package hamburger mix (Knorr, or something similar)
2/3 cup ketchup
1/2 cup water
1/4 cup celery
2 Tablespoons lemon juice
1 1/2 teaspoons worchestire sauce
1 1/2 teaspoons salt
1 1/2 teaspoon vinegar (red wine)
3 cans of kidney beans
Other seasonings would be pepper, cayenne pepper and Tabasco. Always stir thoroughly and taste along the way when adding spices.
Add ingredients to pot and let simmer for approximately three and a half hours.
